Healthy Holiday Desserts
Overview
The holiday season is filled with lots of celebrations, family, friends, and delicious foods, and plenty of opportunities to indulge. While it’s okay to indulge in these holiday treats, it’s also important to remember that healthy eating is a key factor that helps young athletes stay on top of their game. So here are 3 healthy desserts that you can make this holiday season that are both yummy and will help fuel young athletes!
Oatmeal Cookies
Ingredients
- 1 1/4 cups quick-cooking oats
- 1 cup white whole wheat flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1/4 cup unsweetened applesauce
- 4 tbs unsalted butter (melted and cooled)
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup honey
- 1/3 cup dark chocolate chips
- 1/4 cup raisins
- 1/4 cup well chopped raw walnuts or pecans (can be substituted with 2 tbs chocolate chips and 2 tbs raisins)
Instructions
- Whisk together the oats, flour, baking powder, cinnamon, and salt in a large bowl
- In a separate bowl combine the applesauce, butter, egg, vanilla, and honey. Whisk until well combined.
- Pour the wet mixture into the flour mixture and stir until the mixture is well combined. The dough should be wet and sticky.
- Add in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let it chill for 30 minutes but it can be stored in the fridge up to 3 days
- When the dough is ready to bake, preheat the oven to 350 degrees.
- Remove the dough from the refrigerator. Then with a cookie scoop or a spoon, drop the cookie dough onto a cookie sheet, leaving 1 inch of space in between them. With a glass or your fingers flatten each cookie.
- Bake for 9-10 minutes or until the cookies are golden. Take the cookies out of the oven and let them cool for 2 minutes.

Healthy Chocolate Banana Bread
Ingredients
- 3 ripe medium bananas (mashed)
- 2 1/2 cups almond flour
- 3 eggs
- 1 tsp baking soda
- 1/2 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
- Sea salt for the top
Instructions
- Preheat the oven to 350 degrees.
- Line an 8.5 x 9.5 inch loaf pan with parchment paper and cooking spray.
- In a large bowl, mix all the wet ingredients together (mashed banana, eggs, maple syrup, and vanilla extract).
- Then add all the dry ingredients (almond flour, bakings soda, unsweetened cocoa powder, salt, and chocolate chips) to the bowl and mix until well combined.
- Pour into the prepared pan and sprinkle 2 tbs of chocolate chip and sea salt to the top.
- Bake for 50-65 minutes then let it cool for 10 minutes before taking it out of the pan.

Soft and Chewy Paleo Gingerbread Cookies
Ingredients
- 1 medium sweet potato
- 1/3 cup coconut flour
- 1/4 cup tahini paste
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3/4 tsp cinnamon
- 3/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 2 tbs molasses
Instructions
- Preheat oven to 350 degrees
- Wash the sweet potato and then spear it with a fork a few times. Then put it in the microwave on high for 5-6 minutes, or until soft.
- Scoop the inside of the sweet potato out and into a medium bowl
- Add the coconut flour, tahini, baking soda, baking powder, cinnamon, ginger, cloves, salt, and molasses.
- Stir until combined. You may have to use your hands to combine the dough towards the end of mixing it.
- Roll into balls and place them onto a cookie sheet. Once they are on the cookie sheet flatten the cookies with the bottom of a glass.
- Bake for 10-12 minutes.
